Grocery Store on Wheels

Zac Hackney, EFNEP educator in Pitt County, led a healthy recipe demonstration at the Ripe For Revival Mobile Market during its stop at Third Street Academy on May 25th. The mobile market bus brings fresh, locally grown produce to communities and uses a pay-what-you-can model in an effort to address food insecurity. In addition to fruits and vegetables, the bus also has meat and eggs on board, serving as a “grocery store on wheels”.

The bus travels and sets up in areas that might not have access to brick-and-mortar food pantry locations in an effort to take food to where it’s needed. The mobile market bus also has a cooking cart which is used for on-site healthy recipe demonstrations. Zac featured a nutritious egg scramble recipe loaded with veggies from the bus including tomatoes, colorful peppers and onions. It was a hit with all of the adults and kids who visited the mobile market!
