Collapse ▲Nestled in the small rural town of Rutherfordton, NC, the educators of the EFNEP (Expanded Food and Nutrition Education Program) West Unit recently participated in an enlightening tour of the Big Bottom Milk Company. This wasn’t just a field trip; it was a deep dive into the heart of local dairy farming, led by the knowledgeable Preston Green, co-owner alongside Stuart Beam.
The visit offered a firsthand look at the passion, dedication, and sheer hard work that goes into running a successful dairy operation. Big Bottom Milk Company stands as a testament to this commitment, being one of only two dairy farms in Rutherford County and its largest. Home to 70 gentle Jersey cows, the farm produces A2 milk, a unique product gaining popularity for its potential digestive benefits.
What makes Big Bottom Milk Company’s milk special? It comes from cows with the A2A2 genetic makeup. This means their milk contains the A2 beta-casein protein, which some individuals find easier to digest compared to the A1 beta-casein protein found in traditional milk. For those who experience discomfort with regular milk, A2 milk might offer a welcome alternative.

The insights gleaned from this farm tour are invaluable for EFNEP educators. They will now be better equipped to guide program participants, especially those with milk sensitivities, when discussing MyPlate’s Dairy group. MyPlate.gov emphasizes the importance of dairy products for building and maintaining strong bones, as they are rich in essential nutrients like calcium, potassium, vitamin D, and protein. The EFNEP educators are now equipped with fresh knowledge and a deeper appreciation for the local dairy industry. They are ready to share this information with their communities, helping individuals make informed choices about their dairy consumption and overall nutrition.
