EFNEP Educators from the East and Northeast Regions came together for a day of productive discussion and restorative engagement in Pitt County on May 30th. Matt Stevens, CED, welcomed the group to Pitt County and kicked off the meeting with interactive trivia questions. Jamie Carlson, Pitt County EFNEP Educator, shared interesting bits of history about the county including the fact that Martinsborough was the original county seat however, this changed to Greenville, the current county seat, in 1787. Jamie also shared information about the Greenville Community Garden and led the group in a therapeutic gardening activity. The interactive session provided a mindful break and allowed everyone to connect with seeds in a relaxing, hands-on activity. Educators had an opportunity to provide feedback for the very popular EFNEP Chicken and Broccoli Quiche recipe and make customized mini Frittatas with a selection of ingredients that included onions, peppers, mushrooms, spinach, cheese and salsa.
Where Ideas Blossom: A Day of Connection and Cultivation
The day concluded with a tour of the Greenville Community Garden led by Jamie Carlson. The space is volunteer-driven and serves as an outdoor classroom providing experiential learning for the community. Educators had an opportunity to explore the diverse array of raised garden beds which contained fruits, vegetables, herbs and flowers. The garden showcases plants but it also represents a thriving hub for connection, education and access to fresh produce in the community. EFNEP educators were reminded of this renewed connection to nature, a perfect way to end the day!
