Jamie is currently teaching the Families Eating Smart and Moving More curriculum, helping families bridge the gap between knowing what's healthy and actually putting those practices into place - even with a busy lifestyle.

In her first session, Jamie prepared the perennial crowd favorite: Easy Fruit Salad. This recipe is more than a side dish; it's a versatile, nutrition-packed powerhouse that can brighten up any meal or serve as the perfect afternoon snack. One of the best things about this recipe is its flexibility. It's designed to utilize local, seasonal ingredients that can be mixed and matched with the canned fruit that you already have on hand. Easy Fruit Salad

Ingredients

  • 1 (20-ounce) can pineapple chunks in juice, drained
  • 1 (15-ounce) can fruit cocktail in juice, drained
  • 2 small bananas, sliced
  • 1 (8-ounce) non-fat, low sugar yogurt

Directions

  1. Drain pineapple chunks and fruit cocktail.
  2. Wash, peel and slice bananas.
  3. Mix fruits and yogurt together.
  4. Cover and chill until ready to serve.
